Vinification
Fermentation in stainless steel at controlled temperature (indigenous yeasts) to preserve the varietal expression and freshness of the fruit.
Aging
12 months in Etna chestnut tonneaux and terracotta amphorae. The wine gains complexity, structure, and an elegant minerality.

Sommelier’s Notes
Bright straw yellow color with golden reflections. The bouquet is complex and refined: citrus aromas of bergamot and cedar, notes of Mediterranean herbs, and mineral hints of volcanic ash and flint. On the palate, it is vibrant and savory, with enveloping freshness and a well-balanced structure. The finish is long and persistent, with returns of citrus, white flowers, and an elegant smoky trail.
